Eh, in my experience as an italian I can tell you that even tho we use garlic in some recipes it's not nearly as important as non-italians think it is? I may be biased because I'm from the north, but that's my two cents. (My deepest condolences to your tomato allergic friend)

go figure! now I think of it I’ve had a lot of Italian food that doesn’t have garlic in it, but then, I haven’t been to Italy to experience it firsthand… and yeah he’s from the South and everything is tomato :’D
